Justin Smillie has created a cookbook that should be considered a masterclass on braising, roasting and grilling. Almost more of a textbook on the subject than a cookbook. Slow Fires is a heavy tome with absolutely stunning photography, nice thick pages and page after page of instructions. The recipes in this book are definitely more detailed than most cookbooks. I really love all of the instruction given with each recipe. Most taking up at least two pages. There are over seventy recipes included with the book. The book is broken into four sections Braising Roasting Grilling Foundations and Finishes Most of the recipes are fairly involved and will take preplanning. Personally I will have to cook many of these on the weekend. I look forward to trying alot of the basics in the foundations chapter and most likely components from alot of the dishes. I really look forward to diving into this book and would recommend it to most people who love to cook. I was sent this book in exchange for an honest review from the Blogging for books program.
