What a glorious cookbook devoted to braising, roasting and grilling! 

Various techniques are covered in detail -- and some far out methods such as braising chicken legs in the liquids created by a tightly packed pan of peppers. The Peppercorn-crusted short ribs are going to be made very soon this Fall to warm a crisp, windy day.

The photographs are gorgeous and the details provided by this celebrated chef of Upland in NYC will ensure many delicious meaty meals coming from our kitchen.
