This cookbook is visually stunning! Victuals means "food or provisions, typically as prepared for consumption" and in this case this book focuses on the food of the Appalachian region. From a cooking standpoint, I don't know how many of these recipes I would prepare in my day to day life, but I appreciated this book more so from a learning standpoint. There is so many diverse foods from this region and so much I don't know about Appalachia in general! There are 80 or so recipes, both using modern and traditional methods which I appreciated. I would recommend this to a more advanced cook who is interested in midwest cooking.
